The CDA Competency Standard 1.2.3b reflects:
“Candidate encourages children to practice healthy habits.
  •  b) Models, communicates and provides activities that teach the importance of good health to children and families.”​
​This Competency Standard gives a measurable objective to be met by early childhood professionals and can be done using cooking in the classroom! When creating a healthy recipe for young children you should consider it the same way you would a lesson plan or activity.

​This means there should be a clear objective, standard being met, materials, procedure, and assessment. ​​
Recipe (Lesson) Name: Fruit Salad
Age Group:
  • Toddler
  • Preschool
  • School-age
Objectives:
  • Children will participate in making their own healthy snack
  • Children will practice healthy portion sizing

  • b) Models, communicates and provides activities that teach the importance of good health to children and families.
Materials:
  • Plastic butter knives or pastry cutters
  • Cutting boards
  • Large spoon
  • Large bowl
  • Fresh fruits such as melons, oranges, bananas, apples, mango, berries
  • One lemon
Procedure:
  1. Demonstrate the proper way to cut the fruits provided and supervise children as they cut and chop the fruits. Add chopped fruit to a large bowl.
  2. Cut the lemon in half and have children take turns squeezing the juice into the bowl of fruit and stirring it all around.
  3. Show children what a healthy portion size looks like and allow older children to serve themselves some of the fruit salad.
Assessment:
  • Observe and record children’s participation and portion sizing.
